It is already Friday!! 🙂 I’ve been MIA for 2 weeks, and now I am back with some photos of the delicious food that I ate and cooked! The recipes will come later!! 🙂

10 min Big Big Salad

Its raining today in New York City, so now I am sitting at my computer in the office and drinking some orange spice green tea. Yesterday I had a big craving for a beast salad: so I came up with this delicious salad:

My salad contained:

–  mix spring greens

– half of a cucumber

– 1 tomato

– 1 carrot

– 1 raw beet

– 2 hard boiled eggs

– garlic and herbs goat cheese

Served with fresh squeezed orange juice:

When my fiance came home I made him a salad too, same ingredients as mine, but I added some dill, shrimp and raisin:

It was a glorious salad! Served with Italian whole grain bread and a fresh squeezed juice from celery, carrots and oranges:

I am trying to incorporate more fruits and vegetables into my fiance diet! We have an agreement, no meat this week for him, fish or shrimp occasionally and lots of veggie juice and salads! 🙂

How do you make your family or friends to eat healthier? I try to make the transition as slow as possible, step by step, informing the health impact that some products have! And letting them make the decision and see the change! 🙂

Peanut Butter and Sour Cherry Cookies

how is your Monday so far? I took a sick day today because I totally couldn’t sleep last night maybe because yesterday at 12AM I had way too many cookies before bed, when I said many I mean really MANY!! 🙂  So back to what I was saying, I didn’t sleep at all last night, that is so weird and frustrating, so today morning I took a day off from work!

For breakfast I had grapes and orange juice:

I had more, this is a picture from yesterday’s small picnic in our yard. I also had some tea! I was not hungry at all for breakfast, because like I said I had a hundred cookies before bed! 🙂

And now, as I promised yesterday, here is the recipe for the cookies that I did yesterday! My grandma makes them all the time for me and they are delicious, actually they turned out very good, soft and yummy!:)

PEANUT BUTTER AND SOUR CHERRY COOKIES:

You need:

– 2 cups (12 oz per cup) of all purpose flour

– 2 sticks of organic butter room temperature

– 100g Peanut Butter room temperature

– 200g sour cream room temperature

– 2 more cups (12 oz per cup) of all purpose flour

In a bowl combine the first 2 ingredients, the 2 cups of flour with the butter:

Add Peanut Butter and mix well, after that combine with the sour cream:

I don’t own a food processor so everything was done by hand, make sure you mix well the sour cream into the dough, the result should be a very fluffy and moist dough:

Now, little by little begin adding into the mix the remaining 2 cups of flour until the dough will have a moist-firm texture, easy to roll and work with and non sticky:

Cover with a towel and let it sit for 2 hours at room temperature.

After 2 hours divide the dough into balls, size as your fist. Take one ball and roll into a sheet:

Cut in small squares:

 

3 or 4 cherries per square and roll into a small croissant:

 

Or if you are out of cherries and maybe want only peanut butter cookies:

Bake for 30-40 min at 400F until golden, don’t burn 🙂

Let them cool, because we have to cover them in powdered sugar, and if the cookies will be warm the sugar will melt.

Now Enjoy!! A nice paring will be a glass of tea or maybe a caramel cappuccino! 🙂

Sunday-Fruity Day

so the weekend is over 😦 but still I hope everybody had a great time!! We definitely had! 🙂

I started with a very fruity breakfast, I was craving fruits, lots of fruits:

I had strawberries, grapes and fresh squeezed orange juice, and a very satisfied face! 🙂

After breakfast I laid for another 2 hours in bed, speaking on Skype to my family and sipping a cut of decaffeinated green tea that my mom sent to me:

Blueberry and Blackberry flavor!! In my favorite mug that I got as a gift from my grandma:

At 12pm we had an earlier lunch of yesterday’s Vegan Veggie Deliciousness and we headed to play tennis, check the view from our tennis court:

isn’t this Manhattan view stunning? The Empire State Building is so beautiful! 🙂

Well, to clarify, we both, me and my fiance work in the city, by we live across the Hudson River in Jersey City, NJ which is an amazing city with the perfect Manhattan view. Check our complex pool:

After we were done playing tennis we laid on grass and had a small fruity snack:

Afternoon included a nap, a walk to the mall. Dinner was the same as lunch so there is no picture!

And after my grandma gave me the perfect cherries cookies recipe some baking was done the recap and the delicious recipe will be posted later so come back and check!!

Vegan Slow Cook Veggie Deliciousness

How is your weekend so far? Mine is good, after trying to play tennis with my fiance, and running some errands, I decided to prepare a dish that my grandma and mom used to make for me when I was a kid. I was waiting for summer vacation, to go to my grandparents and pick all the ingredients from their garden and prepare this deliciousness. So here is what you need, for 4 servings, note all the ingredients have to be chopped in big chunks:

1.   100 ml olive oil or canola oil

2.   4 carrots

3.   1 green bell pepper

4.   1 eggplant

5.   10 mushrooms

6.   1 yellow squash

7.   1 tomato

8.   1 can of natural diced tomatoes

9.   1 tbsp of natural tomato paste

So, in a deep pot combine the oil and onions, when the onions begin to have a golden brown color add all the others ingredients, the diced tomatoes, 1 tbsp of tomato paste, salt and pepper. Mix well. Cover the pot! Let cook on slow fire for 2 hours mixing occasionally.

 

And here is my plate, I had the Veggie Deliciousness over Spring Mixed Greens with Italian Whole Wheat Bread:

What is great about this dish is that you can please the entire family playing with the recipe, you can add chicken or pork, beef, if you eat meat. Also you can fry or bake some fish and serve this as a side with some pieces of lemon and parsley on the top. It makes great leftovers, second day it is even more delicious and it freezes perfectly!

For dessert I had a few strawberries and some grapes:

While my fiance enjoyed a bowl of fresh California strawberries with some sour cream and sugar, comfort food from our childhood:

What food reminds your about childhood?  I miss my grandmother’s home-made farmer cheese, creamy potato soup and all the baked goods, also my mother’s casseroles, mini pizzas, cakes and stuffed bell peppers!

Coconut Raspberry Banana Foam

how is your Wednesday? I am working from home today, so lunch was pretty simple and more like a breakfast, but this is what  I was craving: WARM MILLET BREAD IN BANANA COCONUT RASPBERRY FOAM WITH PB! In my magic bullet went a banana and 50ml Coconut milk:

after 10 sec:

and now everything goes into the pot, on low fire, for 5 min, top with a spoon of Peanut Butter and 1 tbsp of organic Raspberry preserves, mix:

Now serve! Top with kiwi or whatever fruits you love:

and ENJOY:

During the afternoon I have also snaked on 2 of these babies:

Coconut, almond dates. They are so addictive and delicious, and only 3 ingredients! 🙂

I am going to work three more hours, run some errands, hit the GYM and I will see you after Dinner! 🙂

Hello Blog World!

I’ve been following food blogs for almost 2 years, and here I come today with my first post! Well, today is a rainy day in New York City. I woke up in the morning kind of tired, and only one thing can fix it: A FRESH VEGGIE SMOOTHIE aka Green Monster! 🙂 so here are the ingredients that I’ve used:

5 Celery Sticks, 6 small carrots, 1 beet and 1 lemon! Fresh and delicious!

After all the veggies were “juicy” 🙂 I poured everything in my Magic Bullet blender, and added a hint of fresh squeezed Tropicana orange juice:

And 2 tbsp of Raw Hemp Organic Protein Powder, 1 tbsp of Organic Flax Seeds and 1 tbsp of Raw Maca Powder!

So, I had a very raw and delicious breakfast today!
